10 Minute Chickpea Tacos

For me, summer time means taco time. Ever since it's been warming up outside I've been dying to try some new plant based taco recipes. I recently played with making a recipe for chickpea tacos and let me tell you, they turned out amazing and were oh-so-simple.

The chickpea "meat" took less than 10 minutes to cook and goes well with any topping (I went simple and filled mine with jalapeños, salsa, and lettuce). All you need to make them is a can of chickpeas, some veggies, and spices, making them super easy and cheap. The taco seasoning I used comes from Against All Grain's recipe in her cookbook Meals Made Simple. The recipe and a link to this amazing cookbook is below!

 

Recipe

Ingredients

  • 1 cup of chickpeas

  • 1 red bell pepper, diced

  • 2 tbsp purple onion, diced

  • 1/2 tbsp Against All Grain Taco Seasoning

  • 1 tsp red pepper flakes

  • 1/2 tbsp extra virgin olive oil

Instructions

  • heat a medium sized skillet on medium heat and add EVOO

  • add the onions and pepper to the skillet and sauté for 2 minutes

  • dump the chickpeas into the skillet and sprinkle on the taco seasoning and red pepper flakes. cook everything for about 4 minutes while stirring occasionally

  • serve the veggies and chickpeas on a taco shell and top with avocado, salsa, jalapeños, or whatever else your heart desires!

Against All Grain Taco Seasoning from the Meals Made Simple Cookbook

to make, mix:

  • 2 1/2 tbsp chili powder

  • 1 1/2 tbsp sea salt

  • 1 1/2 tbsp ground cumin

  • 1 tbsp ground dried oregano

  • 2 tsp onion powder

  • 2 tsp ground coriander

  • 2 tsp paprika

  • 1-3 tsp cayenne pepper

  • 1/4 tsp black pepper
